Stirling Single Malt
Stirling Distillery is a family run business founded by Cameron and June McCann.
Established in 2015 to initially produce gin, it has grown in popularity and expanded into whisky, with production starting in 2022.
The distillery is located in the historic ‘Old Smiddy’ in the shadow of Stirling Castle. Constructed in 1888, the distillery has had many lives over the years, from church temperance hall, primary school to blacksmiths. Stirling Distillery is by no means the city‘s first distillery, however it is the first legal one to be found on the castle rock.
With whisky production starting in 2022, the distillery’s lowland location will use water from one of the directors’ private springs. The distillery will have a stringent wood source policy.
Owner Cameron, who has years of experience dealing with whisky, said it’s the casks that hold the most important part of the whisky maturing process.
Stirling Distillery will use a range of casks as they begin whisky production and are delighted to initially offer the following casks for sale:

Limited Release Bottling’s
The VI Casks for King James
If you preference is for bottles rather than casks, then the
VI Casks for King James is for you. At Stirling Distillery our focus is celebrating the history of the city. With this in mind, we are offering the VI Casks for King James. These six different casks and will be released as single casks from 2027 bi-annually. There will only be circa 300 bottles of each and each set will have a cost of £350 per set of six.
