Stirling Distillery Expands Whisky Production Ahead of First Release

Stirling Distillery has announced a significant step forward in its whisky journey, increasing production by an additional day each week. This development, made possible by the dedication of the distillery team, ensures that more of Stirling’s exclusive whisky will be available in the coming years.

The distillery began producing its new-make spirit in early 2024, marking the revival of whisky-making in Stirling for the first time since 1852. While its inaugural single malt release is not expected until 2027, Stirling Distillery’s spirit has already received international recognition, winning Best Scottish New Make at the World Whiskies Awards Scotland 2025.

“As Scotland’s smallest whisky distillery, every drop we produce is incredibly special,” said Distillery Co-Founder June McCann. “By increasing production, we can ensure more people will have the opportunity to enjoy Stirling Whisky when it’s finally ready. It’s an exciting milestone for our team and for the future of whisky-making in Stirling.”

Located in the heart of the historic city, Stirling Distillery has built a strong reputation for craft and quality. Known for its award-winning gins and folklore-inspired spirits, the distillery is now firmly establishing itself as a whisky producer with ambition and heritage at its core.

The decision to boost production comes at a time of growing anticipation from whisky enthusiasts and collectors. With its boutique size, every cask laid down at Stirling Distillery is highly limited, making its future single malts among the most exclusive in Scotland.

At the heart of this progress is Stirling’s 19-year-old distiller, Hugo McCann, who has already earned multiple accolades for his whisky-making skill. Speaking about the increase in production, Hugo said:

“Whisky-making is all about patience. Even though 2027 feels like a long way off, it’s really exciting to know that there’ll be more whisky maturing and waiting for people when it’s ready.
