Autumn Gin Cocktails: Three Serves for the Turn of the Season

The nights are drawing in, the leaves are turning, and the tall summer G and T is starting to feel a little out of season. This is exactly the moment autumn gin cocktails come into their own: warmer, deeper, a touch more spiced, yet still built on the bright juniper backbone you love. You do not need a cocktail cabinet or a bartending course to make them. Three bottles, a handful of storecupboard extras, and you are ready for the turn of the season.

Every serve below is built around the Stirling gin range, distilled in small batches a mile below the castle. Pick your bottle, follow the measures, then adjust to taste. That is the whole art of it.

Why gin comes alive in autumn

Summer serves lean cold and citrus-led. Autumn asks for something rounder. The season brings orchard fruit, brambles from the hedgerow, honey and warming spice, and gin sits happily next to all of them. A juniper-forward spirit cuts through sweetness so a drink never turns cloying, while botanicals like apple, nettle and pink peppercorn echo the flavours already on the autumn table. Swap the ice-packed highball for a shorter, richer glass and you have something that genuinely suits a cooler evening.

Here are three autumn gin cocktails to see you through the turn of the season, from a long crisp opener to a warm serve for the first proper chill.

1. The Orchard Collins

Apple is the taste of a Scottish autumn, so this one starts with Stirling Winter Gin, infused with apples grown in the family garden. It makes a long, crisp serve that still tastes like the season, and it is the easiest of the three to build.

You will need:

  • 50ml Stirling Winter Gin
  • 25ml fresh lemon juice
  • 15ml sugar syrup
  • Cloudy apple juice, to top
  • A splash of soda water
  • An apple fan and a sprig of thyme to garnish

Fill a tall glass with ice. Add the gin, lemon and sugar syrup, top with cloudy apple juice and finish with a splash of soda. Stir once, garnish, and serve. It drinks like an orchard walk on a bright afternoon, and it is very hard to stop at one.

2. The Autumn Bramble

The bramble is a modern classic, and autumn is its home turf: blackberries are ripe in the hedgerows and the flavour turns from tart to jammy. This version leans on the nettle-forward flagship, Stirling Gin, the bottle that started the whole distillery.

You will need:

  • 50ml Stirling Gin
  • 25ml fresh lemon juice
  • 10ml sugar syrup
  • 15ml blackberry liqueur or creme de mure
  • Fresh blackberries and a lemon wheel to garnish

Fill a rocks glass with crushed ice. Add the gin, lemon and sugar syrup, then stir. Slowly pour the blackberry liqueur over the top so it bleeds down through the ice. Garnish with a couple of berries and a lemon wheel. If you like your serves sweeter and more autumnal still, a fruit gin liqueur works beautifully here too: browse the Stirling liqueurs and float your favourite instead.

3. The Warm Spiced Gin Toddy

Gin toddies are underrated. When the first real chill arrives, this is the one to reach for. It is the warmer that closes out the season and eases you toward winter, and it fills the kitchen with cinnamon while you make it.

You will need:

  • 50ml Stirling Gin
  • 2 teaspoons honey
  • 15ml fresh lemon juice
  • 100ml hot (not boiling) water
  • A cinnamon stick, a slice of lemon and a few cloves to garnish

Warm a heatproof glass or mug with a little hot water, then tip it out. Add the honey, lemon and gin, pour over the hot water, and stir until the honey dissolves. Stud a lemon slice with cloves, drop it in with a cinnamon stick, and let it steep for a minute before your first sip. Juniper and honey were made for each other, and the warmth carries the spice right through.
