Christmas shopping has a familiar problem. Everyone you love has already been given a bottle of something. This year, Stirling Distillery has a different answer. From Saturday 3 October you can fill your own whisky at the distillery, by hand, and walk home with a bottle that exists nowhere else on earth. No two are the same, and that is exactly what makes it such a good gift.
Here is the catch, and it is a good one. You cannot buy this online. The only way to get a bottle is to come to the Old Smiddy on Castlehill, below Stirling Castle, and fill it yourself.
What Fill Your Own Whisky actually means
Fill Your Own is a new part of the visitor experience at Scotland's smallest whisky distillery. You fill a 50cl bottle yourself at our fill station, then write the label by hand with your bottle number, the date, and your own name. Every bottle is logged in the distillery ledger, with the name of the person who filled it and the day they did it. It is your bottle, filled by you, on the day you visited. Bottles are £45, and the whole thing takes a few minutes, but you keep it for years.
The first release: the Chairman's Blend
The first Fill Your Own is the Chairman's Blend, a 50 litre blend created by our co founder Cameron McCann. It is a blended whisky we have enhanced with malts from independent bottlings, and it is made once and never again. When the last bottle has been filled, a completely different whisky takes its place, and like the Chairman's Blend it will only ever be available here at the distillery.
"We are always looking at ways to evolve the visitor experience at the distillery, and giving guests the opportunity to bottle their own liquid felt like a great addition to our award winning offering," says Cameron McCann. "There is something pretty special about walking away with a bottle you filled yourself."
Why it is the gift that cannot be copied
Most gifts can be bought twice. This one cannot. A hand filled, hand labelled bottle of a whisky that will never be made again is about as personal as a present gets, and it arrives with the story of the day it was filled already attached. Bring someone you love to fill their own over the festive season, or pair the visit with a distillery tour or tasting to make a proper day of it under the castle.
If you would rather put the choice in someone else's hands, a distillery gift card lets them come and fill their own bottle whenever suits them. It is a Christmas present and a day out rolled into one, and it keeps giving long after the wrapping is in the bin.
Whisky is back in Stirling
Fill Your Own arrives as our own whisky story gathers pace. In 2024 we brought whisky making back to Stirling after 170 years. Our head distiller Hugo McCann won Best Scottish New Make Whisky at the World Whiskies Awards 2025, and our first single malt, Cask One, is due for release in 2027. Filling your own bottle now is a chance to be part of that story while it is still being written, and to taste what a working Stirling distillery is pouring today.
